The Bananas Foster back story:

In the early 1950s New Orleans was a major hub for the import of bananas from South America. The dessert, Bananas Foster was created by chef Paul Blangé at Brennan’s Restaurant and named for Richard Foster, the chairman of the New Orleans Crime Commission, a friend of the restaurant’s owner, Owen Brennan.

The flamboyant dessert is still served at restaurants in the Big Easy — and now you can get all that history and a sweet cup of coffee in Bermuda.

“Bananas Foster is a dessert made from bananas and vanilla ice cream, with a sauce made from butter, brown sugar, cinnamon, dark rum, and banana liqueur. The butter, sugar and bananas are cooked, and then alcohol is added and ignited. The bananas and sauce are then served over the ice cream. Preparation of the dish is often made into a tableside performance as a flambé.”
